It wouldn't be particularly interesting that Lubbock is getting another burger joint, but this isn't just another burger joint.

Heff's Burgers won best burger in Abilene five years in a row, has been featured on Texas Bucket List and boasts some amazing online reviews. But Heff's Burgers is more than incredible burgers. They have an incredible backstory, too.

Heff's Burgers started in the back of a convenience store in Potosi, Texas. Potosi? I never heard of it, either. It has a population of less than 2,000. But the cramped kitchen and tiny population led to big things.

According to Abilene Reporter News, success caught the Heffernans by surprise:

On that first day, Jason and Brenda Heffernan expected to sell about 25 burgers. In just one month's time they were selling more than 200 burgers every day. A year later Brenda Heffernan said they were selling closer to 500 burgers a day.

Brenda Heffernan started the family's hamburger business after their son was grievously injured in a car accident caused by a drunk driver. The accident left him paralyzed from the waist down and Brenda wanted her son Jason to have something to do to expedite his recovery.

Brenda and Jason's idea has blossomed into several restaurants, including the new location set to open in Lubbock.

The Lubbock location will open very soon in mid to late September. They are already hiring staff. The new Heff's Burgers will be located at 5727 82nd Street (where the old Golden Chick was).
