I'll stand on one fact: if Furr's was so good, why did everyone quit going? The answer is, people began to enjoy real food in other places. I'm not even so sure you could say the quality dipped, it's more along the lines of "Do I want baked industrial fish patties, or do I want to go to some place that makes it fresh?" It's not that they were bad, it's just that better stuff has come along.

It's Nostalgia
We will think that the things we had growing up were better. They were not. I remember my favorite thing growing up was Chinese restaurants. Compared to the choices I have now, that stuff was slop. If you're just the tiniest bit choosy you can find place serving better, fresher options. We now also have the ability to have variation on Asian cuisine that weren't even available when I lived in a large metropolitan area as a kid.
There's Better Stuff Out There
Food innovation has been wonderful in our lifetime. Just look at the barbeque explosion. The truth is we weren't getting barbeque anywhere near the quality that we get now. Fajitas, Pho, and more became popular during our lifetimes. I could go on, but the point is, we have more options than ever before, including better cafeterias and buffets.
Memories
I get it, you like Furr's and Furr's throwbacks because you grew up going there. It was probably one of the few times your parents let you choose what you wanted to eat, so it felt special. Furr's tasted like comfort. You know what else is comfortable: a couch. You wouldn't eat a couch, would you?
