Don't get me wrong, I adore Souper Salad, but Lubbock could use a few more restaurants for salad lovers. Most of the salad bars in grocery stores have disappeared, leaving our options pretty limited. However, it looks like a fancy new salad joint might be opening up in town this year.

Salata Salad Kitchen has yet to announce its opening day, but it may be setting up shop in Lubbock early this year. According to the Lubbock Avalanche-Journal, Salata Salad Kitchen offers "fully customizable salads and wraps" and more than 10 homemade salad dressings, alongside soup. The setup looks similar to how you build a burrito at Chipotle or a sandwich at Subway.  It's also rumored that they will be using locally grown vegetables and fruits, which is something I can get behind.

The menu offers various ways to customize your salads and wraps with over 50 different toppings. They also have a large selection of various teas and lemonades that look pretty yummy, like Prickly Pear Limeade.

Hopefully, we will be able to greet another healthy restaurant in Lubbock soon. It might help us stick with those pesky New Year's Resolutions to drop a few pounds. I've stuck to mine so far. What about you? Look for me in the Salata Salad Kitchen when they get to town. I have a feeling I'm going to like it.
