Just Beachy: Popular Lubbock Food Truck To Make Major Menu Switch Soon
A very popular Lubbock food truck will soon make a major menu and concept switch that will leave customers in flavor paradise.
Mai Thai Kitchen has announced that their food truck will soon become Shaka Hawaiian Grill, according to their Facebook post. The brick-and-mortar Mai Thai Kitchen in Idalou will remain the same with Thai food favorites.
Shaka Hawaiian Grill will feature iconic Hawaiian eats like Masubi, which is a spam, rice, and nori handheld food which is way better than it sounds. They will also have a big favorite of mine, Moco Loco, which is hamburger patties smothered in gravy with a fried egg and a side of macaroni salad. I think it's Hawaiian state law that it must be served with macaroni salad, so I'm relieved they are doing that here as well.
Other items will include Chicken Katsu, which is a near-universally loved dish and what you should order if you're unsure what you want, in addition to Hawaiian BBQ plates, and edamame as a starter.

This change has come about because our valued chef, Lek, is planning to return to live with his family in Thailand. He has played a huge role in the cuisine and operations of the truck, and will be dearly missed. Through this transition, we are shifting into a concept that has been in the works for the past year.
