Chilaquiles is probably one of my favorite things to have for breakfast (besides breakfast burritos of course) so when I found out about this place I got so excited.

Chilaquiles Express is served in Chinese take-out boxes with different toppings like proteins, cheese, sauce, and many more options.

For proteins, they will have chicken and beef fajita, ground beef, shrimp, and pork. For salsas or sauce, they will offer a salsas chipotle Swiss which is their house recipe, red sauce (New Mexico Chile Pods Habanero, not super hot.) All will be mild spice points. They will also have things like cilantro, red onions, scallions, avocado, sour cream, cheese and more.

One of those cheeses is Colby Monterey Queso Menonita. This cheese is made by Mennonites and has a German background that was brought over by Mennonites from Germany.

"Personally I prefer this Mennonite cheese with Laurel in it. That is the traditional way to eat Chilaquiles and Enchiladas as well as Chiles Rellenos in Chihuahua," said Alondra Y David Pando.

Their motto is Eat Fast Eat Different Enjoy the Box.

"We are anxious to get out here sharing our authentic Chilaquiles. We would love to invite you to taste our authentic Chilaquiles, which we are sure you will love," said Pando.

Chilaquiles Express is currently negotiating terms with a real estate company on leasing a location but they are now serving through their food truck.

"We plan on working really hard and staying here for good. It's going to be a work in progress but we are ready to work to please and serve the beautiful people of Lubbock. This is our home and we love it here. My wife and I love cooking together. Cooking is our passion," said Pando.
