New Lubbock Restaurant Opening Will Have A Special Chef’s Table
A new neighborhood eatery is opening up in Lubbock and everything looks amazing.
When I heard about The Fresh American I got excited about it opening up. It is going to be a "neighborhood eatery for the people of west Texas; a modern American restaurant, with west coast style and a Texas-soul."
Something about that really grabbed my attention. Then I found out the chef has more than 25 years of experience and I knew it was going to be a new favorite spot. Chef Kirk Delong is known for "creating innovative and unforgettable dishes."
He has experience all over the country, including Waldorf Astoria Grand Wailea Resort in Maui, Ritz-Carlton Laguna Niguel, The Four Seasons Fashion Island in Newport Beach, and over a 15 years as Executive Chef at the Santa Barbara Beachfront Resort and Hilton Los Angeles Culver City.
"We are thrilled to have Chef DeLong leading our culinary team, bringing his talent to Lubbock," said the restaurant's Sommelier and Managing Partner, Blake DeWater. "His culinary expertise is invaluable to our mission of providing our guests with a unique and unforgettable dining experience. We are working hard to give Lubbock something it hasn’t seen before."
The restaurant is on the corner of Memphis and 114th and will have a sleep contemporary design with big windows. The restaurant will employ more than 50 staff members, with a capacity of over 250 guests. The restaurant will have an enclosed patio, outdoor fireplace, an open kitchen and bar, floor-to-ceiling windows, a captivating wine display, private dining rooms, and a special “Chef’s table,” available by reservation only.
The concept of the chef’s table originated from an age-old practice of chefs entertaining their family and friends in the kitchen as they worked. Guests seated at the chef’s tables have typically enjoyed more meaningful interactions with the head chefs than would be possible in the main dining rooms, as well as exclusive multi-course meals often prepared by the head chefs themselves.
The restaurant will showcase a menu that features the best of west coast cuisine with a Texas-inspired twist. Using only the freshest ingredients, The Fresh American will be crafting dishes that are both delicious and visually stunning. This is a look at one of the pizzas they have been working on.

Here is another look at something they are working on creating for the restaurant. I love the presentation and the ingredients. That is something I would definitely order.
Chef Kirk has teamed up with Sommelier Blake DeWater to create a new bar scene for the neighborhood to enjoy. In the bar and cocktail area, The Fresh American will offer refined bar-focused cuisine paired to classic cocktails with fresh modern flare, while showcasing a boutique wine list, local beer, and happy hour.
“We believe this is the kind of experience every city needs, and we are happy to add to the classic charm of Lubbock,” said DeWater.
