When anyone asks me what I miss the most about where I grew up, I always say Trader Joe’s and In-N-Out. And yes, I do believe In-N-Out from the West Coast is better than Whataburger, and I’m happy to fight you on it.

Unfortunately, I don’t think In-N-Out will ever make its way to Lubbock. They tried to build a location where the second Torchy’s Tacos is now by the West End Center, but ended up opting out.

However, I still think there's a chance Trader Joe’s might still come to the Hub City. As Lubbock continues to grow, they are doing a better job at accommodating different ways of living, especially when it comes to people with different dietary needs.

Now, I say they're getting better, but there's still a long way to go. Trader Joe’s is one of those stores that accommodates all sorts of lifestyles. They have the basics, as well as vegetarian, vegan, gluten-free, and many other options that need to be more readily available.

They also have a bunch of fun seasonal options that you can try out. The stock is constantly changing so you are bound to find something you like. The inclusivity of their food as well as it being a true hipster paradise are great reasons, but I also have a very selfish reason for wanting a Trader Joe’s in Lubbock.

My biggest reason is the fact that they carry my all-time favorite salsa.

I don't know what it is about this salsa, but it just hits different. Anytime I visit another city that has a Trader Joe’s, I will buy several jars of this salsa so I can stock up my pantry for a couple months of joy.

So yes, I mainly just want them to come to Lubbock so I can always have their delicious salsa. However, I also think it’s all-around a good store and should absolutely make an appearance in the Hub City.
