The front windows appear to direct hungry Lubbockites to the drive-thru, which led me to believe that they dining room is not yet ready for showtime. The delay could also be explained by the idea that they may be continuing the process of staffing up, as several "Now Hiring" signs are prominently displayed, as well as posted on social media.

As stated, they still appear to be hiring for a variety of positions, which could be slowing the opening of the dining area and front doors.

In addition to the famous rolled tacos featured on Instagram above, you can enjoy a lauded carne asada burrito, which is a favorite in Flavortown, having been spotlighted by Food Network Star (and Smash Mouth cosplay enthusiast) Guy Fieri on his Guilty Pleasures program.

It's no secret that Lubbock has a multitude of outstanding taco shops and food trucks. Here's to the hope that Roberto's Taco Shop also carves out a long-term place on the South Plains culinary scene.

LOOK: Best Beers From Every State

To find the best beer in each state and Washington D.C., Stacker analyzed January 2020 data from BeerAdvocate, a website that gathers user scores for beer in real-time. BeerAdvocate makes its determinations by compiling consumer ratings for all 50 states and Washington D.C. and applying a weighted rank to each. The weighted rank pulls the beer toward the list's average based on the number of ratings it has and aims to allow lesser-known beers to increase in rank. Only beers with at least 10 rankings to be considered; we took it a step further to only include beers with at least 100 user rankings in our gallery. Keep reading to find out what the best beer is in each of the 50 states and Washington D.C.
