This past weekend, I was doing a live remote over at Ralph's Records and my friends from Jimenez Tortilleria y Taqueria were already setting up to sell tacos and...these things.

It was listed as a 'Concha' and customers could choose the kind of meat that they wanted on it. Mark from Jimenez hooked me up with a bite of some of the most delicious brisket I've ever eaten, so that's what I picked.

Mark's guy cut the concha in half, and slapped a TON of this moist, peppery brisket on one side then asked me if I wanted it 'decked out'. 'SURE!', I said. (I'll literally try ANYTHING once, and so should you!) He then added what looked like homemade spicy pickles and pickled purple onion on top and slathered it in some GREAT barbeque sauce.

He warned me that it was a pretty messy sandwich to eat, but it was delicious. He said, 'ENJOY!" then then sat it down in front of me. Before I picked it up, I took the picture you see below...

The very second I tasted this sandwich, I was in LOVE! The peppery, moist brisket with the crunch of the spicy pickle and the vinegar flavor of the pickled onion was SPECTACULAR with the very light sweetness of the concha. Now, it WAS messy, just like the guy said. That wasn't a big deal though. Afterall, isn't barbecue SUPPOSED to be messy?!? I would give this sandwich an 11 out of 10!
I immediately posted the picture to LBK Foodies on Facebook, and expected everyone to go nuts over this culinary piece of art and go running to get one.

That was NOT the reaction I got!

Nope. Haha I love some Pan but this is too far. From a culinary standpoint I don’t think it works. From a Mexican standpoint…..it’s just wrong. Haha-richard--

 

I’m not a big fan of concha — I get its appeal, but it’s just not my thing (I’m just a white dude that lived in Texas for a long time, then moved away). That said, if I had a friend that said “you gotta come check out this concha brisket sandwich,” I’d be all in! Not something I’d go for on my own, but definitely something I’d probably enjoy with company! Thank you for sharing!-XTanuki

 

That brisket better be the most succulent in the entire state. I've never had a concha that wasn't so dry it was like eating beach sand.-baconkun325
