United Supermarkets’ Recipe Ideas for Using Pumpkin Puree Leftovers
It's pumpkin season, so you probably have a few recipes with canned pumpkin puree that you make this time of year. Do you find yourself using just a half-cup or cup of the can and then wondering what you'll do with the rest?
Before you just toss it in the trash, United Supermarkets' Corporate Dietitian Brenda Garcia has a few ideas:
- Substitute about a half-cup of pumpkin puree for the fat in quick bread recipes
- Stir pumpkin puree into your pancakes, waffles, smoothies, or oatmeal
- Craft a fall yogurt bowl with yogurt, pumpkin, maple syrup, cinnamon, and pecans
- Try stirring some pumpkin puree in a pot of chili or in spaghetti sauce
Overall, pumpkin is a source of fiber, Vitamin A, and beta-carotene, so it supports healthy eyesight.
You can freeze pumpkin puree if you're planning to use more around Thanksgiving and other holidays, but make sure you use a freezer-safe container. You wouldn't want to use the original can.
