At one point, we weren't sure if Uncle Julio's was even going to open in Lubbock. Now, we have a date of the grand opening!

Uncle Julio's, located at the South Plains Mall off Slide Road and Loop 289, has been under construction for three years. They originally broke ground in 2019 with the expectation of opening in January 2020. There was actually some talk that they could open by Christmas 2019, but that didn't happen.

Then, 2020 hit.

Construction continued at Uncle Julio's until the coronavirus pandemic shut down just about everything. In June 2020, the building was just sitting there, but previous reports show that the South Plains Mall believed that construction would restart at some point, they just didn't know when.

Then in late 2020, activity began again at Uncle Julio's, and in November 2020, signs went up on the building.

Now we know that Uncle Julio's will open on Tuesday, March 30th, 2021.

Uncle Julio's was founded more than 30 years ago and currently operate more than 35 restaurants across 11 states. They take pride in their made from scratch Mexican Food, according to their website:

We opened our first restaurant with a simple commitment to fresh ingredients and handcrafted recipes. From the very beginning, we served mesquite-grilled fajitas, crave-able guacamole, and other Tex-Mex favorites. Uncle Julio's is located next to Bubba's 33, which opened Monday in Lubbock.
